Pineapple Cafe & Mexican Grill

I never thought that pineapple in pancakes would be good but I am blown away by their pancakes and everything else on the menu!

This is a Mexican restaurant located in a strip mall. They are open for breakfast as well, and they do have Mexican items available for breakfast, but they have a wide assortment of pancakes and some crepes as well, as well as some skillets and traditional American breakfasts. We were there on Labor Day, and they admitted to thinking it wouldn't be busy so they don't have appropriate staff for the business. As a result, it took over half an hour to get our food after we ordered. I can't complain about the food, though, nor about how at least the staff was working as fast and as best as they could to try to handle the business.
